HOW WE STARTED

Lucky Lab Coffee Co. began as a simple idea—one that started in Hawaii, found its footing in Charleston, and eventually made its way to Austin, Texas in a little black coffee truck.

In those early days, we spent our time traveling around the city, serving coffee at weddings, local events, festivals, corporate offices, and across the University of Texas campus, getting to know people and finding our place along the way.

Not long after, a post on a food truck site led to an opportunity with Urban Outfitters near West Campus. We built an open-air trailer, settled in, and got to work. A year later, we were invited to open our first brick-and-mortar just next door. What started as a small, mobile coffee concept has grown into multiple locations, including shops on the University of Texas campus and a brick-and-mortar in Dripping Springs, with more on the way.

Today, Lucky Lab is still rooted in the same approach we began
with—serving quality, locally roasted coffee, creating spaces that feel welcoming, and paying attention to the details that matter.

From our full bakery, where we make our pastries, syrups, and sweet creams from scratch, to the way each shop comes together, everything is done with care and intention.

Giving back to our community is part of what keeps us going.

Our main passion is helping dogs, cats, and animals in need throughout the greater Austin area—partnering with local organizations through profit-sharing events and in-kind donations to support their work.

Inspired by a love of dogs, Lucky Lab is meant to feel warm, familiar, and easy to settle into—a place where people gather, stay awhile, and find their way back again. We’re grateful for the community that has grown with us and for everyone who continues to be part of the story.
